Lemon Poppy Seed Muffins

Happy Saturday!  Today I have whipped up
some yummy muffins, that is if one can whip
anything up this early on a Saturday!
Lemon Poppy Seed Muffins
1 3/4 cups All Purpose Flour
1/2 cup Sugar
2 Tbs Baking Powder
1 Egg
3/4 cup Milk
1/4 cup Vegetable oil
1-2 tsp Lemon Extract (Not Lemon Juice)
1 Tbs Poppy seeds

Place flour, sugar and baking powder in a mixing bowl.  Make a little well in the middle and add all other ingredients mix.  Don't go crazy stirring, some lumps are good with muffins.
Bake in a 400 degree oven for 18-20 minutes or until golden brown.

Lemon poppyseed muffins are my favorite! Thanks for sharing this recipe. Sounds pretty easy.
